Memorial Day Menu to Kick-Off Grilling Season!

I hope you are looking forward to a great Memorial Day Weekend! I know I am. Here’s the menu I’ll be grilling up… Churrasco Steak with Chimichurri SauceDrunken Shrimp Fajitas, my infamous Fresh Start Market Black BeansCumin and Lime Marinated Summer Squash and to top it all off a Grilled Pineapple Sundae with Chocolate Rum Sauce! Ice down some Pale Ales and have a great weekend!

Churrasco Steak with Chimichurri

Chimichurri does double-duty as both a marinade and a finishing sauce. I made it with beef tenderloin that I “roll-cut (unrolled the meat with a sharp knife like a unrolling a roll of paper towels!). If that seems too daunting, substitute skirt steak and follow the directions for marinating and grilling.

Cumin and Lime Marinated Summer Squash

Zucchini, crookneck, yellow squash… all good! This is also a great all-purpose marinade… soak some chicken breasts in this vinaigrette for a  few hours, grill ’em up and BAM!

Grilled Pineapple Sundae with Chocolate Rum Sauce

I have gotten  a lot of mileage from this recipe over the years and you’ll see why. Grilling the pineapple condenses and caramelizes the sugars, plus a little char and smokiness from the grill… (how do you spell that sound that Homer Simpson makes??)
