Deliciously Simple Baby Back Ribs

Simple to make, but not in taste. Cut your rib cooking teeth on the easy to make pork baby back ribs.  Smoked paprika added to the spice rub gives that nice authentic smoked flavor without having to worry about stoking the smoke box.

Deliciously Simple Baby Back Ribs

Serves 4

3 tbsp smoked paprika
4 tbsp light brown sugar
2 teaspoons dry mustard
1/2 tsp cayenne pepper
Sea salt & freshly ground black pepper
3 racks pork baby back ribs
2 cup barbecue sauce

Set grill for indirect cooking over medium-low heat (220-275 degrees F). Combine paprika, brown sugar, mustard, and cayenne in a bowl.  Remove thin membrane from back of ribs, and then season both sides of ribs with salt and pepper.  Rub ribs with spice mixture until all of the spice mix is used.

Cook the ribs for 3-4 hours “low and slow”; make sure to keep the grill closed as much as possible using when indirect heat. During the last hour of cooking, brush the ribs every half hour or so with your favorite barbecue sauce. Remove the racks when the rib bones pull apart effortlessly, and with some meat still attached to the bone. Serve and enjoy!
